- Tri tip roast – 1 (about 3 lbs)
To sear:
- Mayonnaise – 1 tablespoon
- Avocado oil or other high smoke point oil – 2 tablespoons
- Smoked Maldon salt – 1 teaspoon
Instructions
- For the dry rub:
- Gather all the spices and mix equally by stirring. Keep it aside.
For the tri tip:
- Prepare the water bath by preheating to 132 degrees.
- Generously rub all the spice rub mixture on all sides of the tri tip.
- Use the water displacement method or vacuum seal to bag the tri tip.
- Cook the tri tip for 6.5 hours at 132 degrees.
- Take out the bag and pat dry the tri tip very thoroughly.
To sear:
- Roll out the thin trace of mayo onto the tri tip (a silicone pastry brush is excellent for this).
- Heat a large cast iron skillet on medium-high heat until it gets scorching.
- Pour avocado oil and afterward the tri tip. Sear it on each side for about 30 seconds until it gets well-browned shade.
- Take out from the pan, thinly slice it and sprinkle up some Maldon salt.

Ingredients:
- Kosher salt – Diamond Crystal
- Lard or fat of choice – 2 tablespoons
- Freshly ground black pepper
- Onion powder
- Garlic powder
- Grass-fed tri-tip roast – 2½ pound
Instructions
- Pat your roast dry, and by using onion powder, salt, pepper, and garlic powder, season it nicely. Afterward, vacuum seals it.
- Keep it in the Sous Vide Supreme set for 6 hours at 130°F.
- Take out the packet from the machine, and for 1 hour, dip it in an ice bath, afterward store it in the fridge until you are ready to serve it.
- Put the chunk of meat back in the Sous Vide Supreme for 30 minutes, at 130°F to heat it again, when you are again ready to serve it.
- Take out the tri-tip and pat dry. Take a large cast-iron skillet and heat up on medium-high heat flame and sear the roast on each side for 2 minutes while undisturbed.
- Give a little rest to the meat and then slice it up. Enjoy!
SOUS VIDE TRI-TIP WITH CILANTRO BUTTER RECIPE

Sometimes all you need in cold winter evenings is the soulful light treat of beef and your favorite wine. Especially when your extended family comes over, you would certainly like to make sit out with them grabbing your warm dish with dainty sous vide tri tip.
Ingredients:
- Lime juice – 2 teaspoons
- Salted butter, softened – 1 stick
- Minced shallot – 2 teaspoons
- Chopped cilantro leaves – 3 tablespoons
- Vegetable oil – for cooking
- Chipotle chiles in adobo – 2 (stemmed, seeded and minced)
- 2-pound tri-tip sirloin – 1, (2 inches thick, chilled )
- Kosher salt – 2 teaspoons
Instructions:
- Prepare a water bath by preheating to 135°.
- Use salt and pepper, season the tri tip with it. Transfer it to a 1-gallon vacuum-pack bag, vacuum-seal it. Give the water bath, immerse the bag and cook for 1 hour at 135 degrees.
- Take a bowl and mix the shallot and the lime juice in it; keep aside for 10 minutes. Beat butter, cilantro, chipotle in a handheld mix at low speed until blended.
- Take a grill pan and preheat. Take out the steak from the water; for 10 minutes, let stand in the bag. Take out the steak, and pat your steak sous vide tri tip dry. Brush up the grill by using some oil and grill the sous vide tri tip steak on high heat flame, flip it once, let it get brown and crusty, grill for 2 minutes. Transfer the steak into a work surface; give it 5 minutes of rest. Slice the meat in thin pieces and shift to plates. Serve it with cilantro butter.
SOUS VIDE TRI TIP SMOKED
Sous vide tri tip is my favorite alternative for savory BBQ! I thought I should give a try to smoke some tri-tip after taking a sous vide bath, something which is not shared on the internet. The final dish was ultimate sous vide tri tip smoked version, wonderfully soft and tender, smoky piece of beef which tastes like a paradise when merged with grilled veggie salad and grilled tomatillo salsa.
Ingredients
- Pepper – 2 oz
- Curing salt – ¼ oz
- Tri-tip steak – 1 lb
- Salt – 2 oz
Instructions:
- Set a Sous Vide to 131°F / 55°C
- Use salt, pepper, to season a tri tip and curing salt
- Seal the tri tip steak
- Cook the tri tip for 6 hours
SMOKER FINISH
- After 6 hours of cooking, set an ice bath. For 15 minutes, immerse the tri-tip into an ice bath. Just to ensure the smoking does not overcook it, this will lower down the internal temperature
- Take out the tri-tip from ice bath and bag, and pat dry. Add extra seasoning if you need it.
- Smoke the tri-tip between 225-275F, for 1 hour.
- Take it out, wrap with foil, and give the 15 minutes of rest.
- Slice your tri tip and have fun!
SOUS VIDE TRI TIP RECIPE
Ingredients
- Salt and pepper
- 2-3 Ib Tri Tip Roast
- 1 Nos Clove garlic
Instructions
- Set the sous vide to 55C/131F and prepare it.
- Use salt and pepper, season the trip tip. Along with crushed garlic, store the tri tip in a freezer bag and you can use vacuum sealer or the water displacement method to completely remove the air. After the 6-hour bath, drop the tri tip.
- Finishing:
- Take out the bag from the bath. Remove the tri tip from the bag, pat dry, and season with your favourite seasoning, salt, and pepper for taste. Take a pan, heat it on high flame, and pour oil. Sear on each side for 1 to 2 minutes.
- Chop it and serve tri tip along with the refreshing chimichurri or your cherished BBQ sauce!
