Give it a rest to get cool down a bit. Afterwards, crack it by using a rolling pin. Turn off the flame and break it and make smaller pieces out of it. You can store it for 6 days in wrapped container.

    2. Arrange a heavy 4-quart saucepan and stream the light corn syrup, sugar, water, keep the pan over medium heat flame.
    3. Let the sugar get dissolved completely, keep stirring it, then turn up the flame to high, keep a candy thermometer at correct place.
    4. Cook the candy until it reaches 260 F, over medium-high heat.
    5. Pour the butter, 3/4 tsp. of salt, peanuts at this point and stir it well. Again, decrease the flame to medium.
    6. Cook the candy until it reaches 295 F, keep stirring it consistently. It will take up a dark golden colour during the cooking process and gets an aroma of caramelizing sugar.
    7. Take out the pan from the heat as the candy reaches 295 F and mix the baking soda and vanilla and stir them in. The candy will foam up a bit due to baking soda.
    8. Get a prepared pan and stream the candy onto it and spread into a thin layer.
    9. Let the brittle cool down for some time, until it is not very hot. Just for your safety, you can wear the ‘food-safe latex gloves’ if you want to protect your hands from excess heat or you can use nonstick cooking spray to spray on your hands.
    10. Gently, stretch the brittle as thin as possible with your hands. Let it rest and cool down completely at room temperature when you can no longer stretch it, at least for 40 minutes.
    11. Melt the chocolate and stream it on the top of the brittle once it is cold. Roll out a thin layer of it, so the whole brittle is covered.
    12. Sprinkle the flaked sea salt on the top while chocolate is little wet, then keep the chocolate to set wholly.
    13. Break the brittle and carve out small pieces in the desired shape to serve.
