- Keep the dough in a warm place for at least one hour.

Ingredients-
For the spice mixture-
Whole peppercorns two teaspoons
Cumin seeds one teaspoon
Bay leaves- 2
Cloves- 2
Coriander seed two teaspoons
Cayenne pepper half teaspoon
Kosher salt three teaspoons
Dried Mango Powder one teaspoon
Paprika two teaspoons
Aromatics-
Cilantro leaves two cups
Roughly chopped four garlic cloves
Roughly chopped one medium onion
Four Thai chilies

Grated ginger one and half teaspoons
Procedure-
- Roast peppercorns, cumin, coriander, cloves over medium heat and stir continuously so that it doesn’t get burnt. Add in a blender with bay leaves and grind coarsely.
- To a food processor, add cayenne, red onion, dried mango powder, cilantro, ginger, chilies, garlic, salt, and make a fine paste of it.
- Take the mixture in a double layer of cheesecloth and press hard to remove all the water from it. Continue doing so till the mixture turns dry and has no moisture in it.
- Take the lamb mixture in a bowl along with the blend of spices and fold properly so that the mixture is blended. Keep the mixture covered for at least 6 to 7 hours.
- Next, take the mixture and divide its portions.
- Shape into a cylindrical shape and pierce through skewers carefully.
- Make sure the mixture is not broken on any side.
- Grill the kebabs on an open grill or charcoal grill for at least 5 minutes or more till the kebab is golden in color.
- Keep on the serving platter and garnish it with lime wedges, cucumber, cabbage, or red onion slaw.
