  • Olive oil – 1 Tablespoon
  • Shallots, chopped – 2
  • Small yellow onion – ½
  • Cloves Garlic, minced – 4

  • White wine – ¼ cup
  • Hot sauce – ½ Teaspoon
  • Sea salt – 1 Teaspoon
  • Ground black pepper – ½ Teaspoon
  • Low sodium chicken broth – 1/3 Cup
  • Tomato paste – 1 Tablespoon
  • Paprika – 1 Teaspoon
  • Lobster base – 1 ½ Cups
  • Coconut milk – 1 cup full fat
  • Dried thyme – 1 Teaspoon

Instructions

 

  1. Over high heat, fill up a large pot with water and boil it. For 8-10 minutes again simmer it, after the water gets boiled, put the lobster tails
  2. When the shells turn bright red and the flesh is visible. Discard the lobster from it and let it get cold for some time. Save the water – it can be used as your lobster base.
  3. If you want to make the lobster base, discard the lobster by its shell by cutting it with kitchen shears or finely chopping and extracting the flesh. On a cutting board place the lobster, when you discard all remaining veins, cut it into small pieces. You can throw the shells in the same liquid you boiled the lobster and again boiled It for some time. After 10 minutes, remove the water from shells and preserve 1 1/2 cups of the base.
  4. In a saucepan over medium-high heat, heat some olive oil, Put the shallots and onion and stir for 5-6 minutes until it becomes tender. Mix the garlic in it and cook for some time more, stop when the garlic gains some flavour.
  5. Stir to continuously, Mix the chickpea flour with the onion-garlic mixture.
  6. Steam some wine in it, slowly mix the wine into the thick mixture. And when it becomes smooth, mix some pepper, hot sauce, salt, thyme. For 2 to 3 min, cook it until you get a proper mixture of a thick paste.
  7. Then add chicken broth to it, also add some paprika with tomato paste and lobster base and stir it continuously to mix, Keep it uncovered, for 10 minutes.

Thoroughly blend the mixture using a blender. Make sure to get the smoother mixture. Mix some coconut milk with lobster chunks, put the mixture you get by combining into the pan. Taste to check the amount of salt and other ingredients to be adjusted.

  • Ground black pepper – salt and freshly

Instructions:

 

  1. Take the lobster and remove its claws and to extract the meat crack the shells thoroughly, keep the shells. Discard the head, with the help of your fingers press the shells and your hand until the shell cracks completely and extract the whole meat, again squeeze full shells and store them in the fridge for further requirements.

 

  1. Take a heavy-based saucepan and melt the butter, for 3 to 4 min fry the shells gently with the peppercorns, shallots, garlic, fennel seeds, stir it regularly. Mix the flour with tomato purée and saffron, after sometime mix some white wine & fish stock. Boil and simmer for at least 20 minutes after that mix cream in it, cover it and stir for some time. Mix the 1/5 part of shells in it with little liquid and blend it nicely, shake the pan and simmer for more time. Extract all sauce into the bowl.

 

  1. Cut the lobster tail meat to serve and again heat the sauce by using the claw & leg meat. Heat the pancakes on the grill then serve them gently on plates. Put some meat and sauce to a side of pancake to roll, sprinkle the remaining meat and sauce on it.

Remove the yellow-green tomalley and discard claws. Shift the lobster halves, break nails and keep them on a baking sheet. Stir the halves and claws with some oil, and cover them up with salt & pepper.
  2. Set a gas grill to high flame; turn off burner on the side. Add lobster halves in it, with flesh side down, and keep the claws on the part of grill which is hottest; cook it for some time, at least for 4 to 5 min. Turn around the lobster continuously, again and again, sprinkle some garlic-parsley butter on lobster; grill it until the lobster meat becomes thick, for 5 to 6 minutes.

Ingredients:

 

  • Lobsters – 4
  • Fish stock – 1 cup
  • Vegetable oil – 1-2 Tablespoon
  • Pickling onions, peeled – 12
  • Crushed garlic – 2 Teaspoons

 

  • Fresh chilli pepper, finely sliced and seeded – 1- 2
  • Curry leaves – 4-5
  • Ground cumin – 1 Teaspoon
  • Ground coriander – 1 Teaspoon
  • Turmeric – ½ Teaspoons
  • Ground cardamom ¼ Teaspoons
  • Stick cinnamon – 1
  • Ripe tomatoes, blanched, skinned, and chopped – 4 Large
  • Lemon juice
  • Salt
  • Fresh ground black pepper – for taste
  • Plain yoghurt (optional) – ¼ cup

DIRECTIONS:

 

  1. In a large saucepan, get a fish stock and boil, Add tail fans and lobster bodies and boil for 6 minutes. Discard that from the pot. Extract all legs and claws, cover it and keep it for some time for the tail fans, for the sauce, save the stock well.
  2. In a large saucepan, heat a little oil and add lobster tailpieces, cover them all for about 1 or 2 minutes.
  3. Cook the onions and garlic in the same pot until they become lightly brown, then add the cumin, coriander, cinnamon, turmeric, chilli, curry leaves, cardamom. Stir the spices for some time, Mix the lemon juice and chopped tomato, sprinkle a little salt with pepper. Stir for some time.
  4. Mix the lobster in the sauce and stir it nicely until it gets cooked. Mix some yoghurt and heat it. Add it into the warm bowl from the pan. Decorate it more with remaining tail fans and legs.
