- 2 teaspoons Cumin seeds
- 125 ml Milk
- Pinch Chili Flakes
- 140 g Split red lentils
- 1 L (from a cube is fine) Hot vegetable stock
- 2 tbsp olive oil
- 600 g Carrots (washed and coarsely grated)
- Plain yoghurt and Naan bread - for serving
Instructions
- Take a large saucepan and heat it on medium heat flame. Take two tablespoons of cumin seeds and dry-fry them in the saucepan. Add up a little amount of chili flakes in it and cook until they start jumping in the pan and produce a pleasant aroma or for 1 minute at least.
- Take a half spoon of them and keep it aside. Now take two tablespoons of olive oil, split red lentils about 140g, coarsely grated carrots about 600g, hot vegetable stock 1l and 125ml of milk. Add all these ingredients to the pan. Bring them to a very light boil.
- Simmer the ingredient until they are subtly swollen and soft or about 15 minutes.
- Get one stick blender and whizz the soup, or you could even blend it through the food processor until it becomes very smooth.
- Season it and taste. Add a dollop of plain yoghurt to finish the recipe, also drizzle up some reserved toasted spices over it. Serve the soup.
