SUGAR FREE PEANUT BRITTLE RECIPE

Ingredients
  

  • 1 cup Roasted & Salted Peanuts
  • 2 ounces butter
  • 3 ounces Swerve
  • 1 teaspoon Vanilla Essence

Instructions
 

  • Use a parchment paper and line a cookie sheet with it, evenly roll out the peanuts.
  • Take a small saucepan and pour the swerve, butter and vanilla essence over medium-high heat.
  • Cook the mixture until it reaches the caramel stage, it will take up the deep brown shade. Keep in mind that, not cooking the caramel properly will leave your brittle somewhat grainy.
  • Stream the caramel on the peanuts and let it cool down completely, at least for 30-50 minutes.
  • Split the brittle into pieces and serve.
