You should use the day-old old rice which can be the most suitable for frying purpose, also don’t forget to leave the rice inside the fridge to eradicate all the extra moisture and allow rice grains to become firm.

Simply roll out a thin layer on baking sheet and keep in a fridge if you only have an excess to freshly cooked rice, keep the rice fridge for couple of hours and allow it to completely dry out, and let it get completely cool.

The preparation of this fried rice is a very simple and easy to make process so just prepare your complete ingredients and opt for brief stir frying. Opt for the rice with uniform and small sizes to make sure your cooking is even and quick.

If you use a day old rice for this recipe, this dish will become very tasty and delicious, however if you are using a day old rice then just pour little bit of water to moisten the rice before you use it for cooking, this will keep the rice tender and soft till the point it is completely done. If you skip this step, your dish will be quite chewy and undesirable.

If you are using freshly cooked rice, just allow it to sit for 5 minutes or extra time as this will prevent your rice from getting sticky and your stir frying process will be hard.

If you want to enjoy maximum aroma and taste, simply fry the garlic first, take it out and then again put it back, and this will enhance the fragrance and beautiful aroma of the dish. This step will create a lot of alteration in taste and the taste will be very different from simple sautéing process where you just add all the ingredients.

You should use a wide wok that has an elevated sides as this well encourage the good distribution of complete ingredients and you can avoid the spilling of ingredients and rice will have enough space to get toasted nicely. Stir-fry on high heat to prevent the rice from sticking to the surface and to give it a nice, toasty flavor.

Also, drizzle up some liquid seasonings like fish sauce and soy sauce to make your rice safe being mushy just because of excess of moisture.

You can prefer to add the eggs just in the center of the fried rice, by making simple well. Get another pan and cook eggs separately in it, in last two to three minutes of recipe. Cook the eggs well and until they are little bit wet and at the end add them to your fried rice.
