You should use the day-old old rice which can be the most suitable for frying purpose, also don’t forget to leave the rice inside the fridge to eradicate all the extra moisture and allow rice grains to become firm.

Simply roll out a thin layer on baking sheet and keep in a fridge if you only have an excess to freshly cooked rice, keep the rice fridge for couple of hours and allow it to completely dry out, and let it get completely cool.

The preparation of this fried rice is a very simple and easy to make process so just prepare your complete ingredients and opt for brief stir frying. Opt for the rice with uniform and small sizes to make sure your cooking is even and quick.

You can prefer to add the eggs just in the center of the fried rice, by making simple well. Get another pan and cook eggs separately in it, in last two to three minutes of recipe. Cook the eggs well and until they are little bit wet and at the end add them to your fried rice.

  1. Simply break some cold cooked rice in order to separate grains in a bowl.
  2. Get a wide wok or pan and heat it up on high heat flame. Drizzle up 1 tablespoon of oil when the pan gets really hot and swirl it around to coat, just in the bottom of the pan. Heat up the oil until it shimmers.
  3. Add garlic and onions, cook it to the point it is wholly soft.
  4. Drizzle up some sausages and keep cooking until it is completely heated or for 2 to 3 minutes.
  5. After that pour shrimp and cook it until the color transforms to pink shade.
  6. Pour green peas and let them cook until they are completely heated. Take out the mixture from the pan and let it get warm.
  7. Pour the leftover 1 tablespoon oil in the pan and allow it to heat up to the point it is smoking.
  8. Add up the rice and cook it, spread the rice on complete cooking surface of the pan. Cook the rice for 45 seconds or to the point grains start to sizzle and keep tossing the pan to distribute the ingredients well. Keep tossing the pan until rice is completely heated.
  9. Add shrimp mixture, sausage, green onions and soy sauce. Toss the pan gently to mix all the ingredients.
  10. In the middle of rice, make a big well and add the eggs. Let the eggs set for some seconds, and afterwards break them in chunks with spoon.
  11. Season the dish with pepper and salt to enhance the taste.
  12. Keep cooking for 1 to 2 minutes and again stir the dish in rice, serve the dish while hot.
