  2. Mix all the ingredients in a small blender to get Peanut Ginger Sauce. If you get a uniform mixture, blend it.
  3. Heat 1 tablespoon of oil over medium heat in a large cast-iron skillet. Make ½ inch pieces of tofu.
  4. Heat the oil and add tofu and salt. For 5-7 minutes stir it frequently, when the tofu is getting olden stop cooking.
  5. Add the peanut sauce in ½ quantity in the tofu and cover the whole tofu pieces with it.
  6. The sauce might make the pan sticky, but that is perfectly fine. Once the tofu pieces are browned in edges, stop the cooking and set it aside.
  7. In a separate pan add remaining oil, Stir some broccoli for 5 minutes until it becomes wilted and soft.
  8. Spoon rice at the bottom of every bowl to serve it, Evenly distribute tofu and broccoli, sprinkle some extra sauce and your favourite toppings. Serve it.

  • Pitted Kalamata olives – ½ cup
  • Pitted green olives – ½ cup
  • Minced fresh oregano – 2 Tablespoons
  • Salt to taste
  • Package feta cheese, diced, divided – 1(4 ounces)
  • Minced Fresh oregano, or to taste – 1 Teaspoon
  • English cucumbers – 2 Large
  • Kosher salt – 1 Pinch
  • Cherry tomatoes – 2 cups
  • Red onion – ¼

Instructions:

  1. By using a channel knife peel off the skin of the cucumber, create a stripe pattern in half crosswise, cut cucumbers. Before cutting into 1/4- to 1/2-inch slices cut every half piece into the quarter.
  2. Use a colander; sprinkle some kosher salt, for 10 to 15 minutes keep it aside.
  3. Cut the cherry pieces in half. Wash the cucumbers; for 10 to 15 minutes more, drain thoroughly.
  4. When cucumbers are draining, cut the onion into the thin piece, make strips of pepper bell by cutting it. Cut diagonally and make diamond-shaped pieces out of it—Chop green olives and Kalamata.
  5. Take a bowl, mix all ingredients like cucumbers, onion, bell pepper, olives, tomatoes, along with two tablespoons oregano. Sprinkle some salt, black pepper, cayenne.
  6. Sprinkle some vinegar and stir it nicely. Stream some olive oil in it, Mix 2/3 of the feta cheese and remix it. Use plastic wrap to cover it; you can keep it refrigerator for 30 to 60 mins.
  7. If you want to give your salad some more taste with extras, taste it and sprinkle desired ingredients as per requirements. Dissolve the feta cheese on top which is remaining and sprinkle some oregano.
